Simple Dark Chocolate Truffles

In this article I will show you how to prepare simple Dark Chocolate Truffles. These chocolate bites are luxuriously rich and delicious. Because truffles are prone to melting, keep these little gems cool. Recipe makes 18 servings. Here are ingredients and directions:

SIMPLE DARK CHOCOLATE TRUFFLES

INGREDIENTS :

4 ounces gluten-free semisweet chocolate
3 ounces gluten-free bittersweet chocolate
1/3 cup powdered sugar
1/3 cup heavy cream or soy or almond milk
1 tablespoon almond liqueur
2 tablespoons unsweetened cocoa powder

DIRECTIONS :

Line a 13 × 9-inch baking sheet with wax paper and set aside.
In a food processor, combine chocolates and powdered sugar and process until chocolate is finely chopped.
In a medium saucepan, heat the cream over medium heat just until it starts to simmer. With the food processor on, pour the hot cream mixture through lid and process until the mixture is smooth. Add liqueur (if using). Scrape mixture onto pan and press down with spatula to an equal thickness. Chill 2 hours.
Working quickly, cut the chocolate into 18 equal-sized pieces. With your hands, quickly roll each piece into a ball and put it on a plate. Chill 15 minutes.
Remove the truffles from the refrigerator and quickly dredge 3 balls at a time in the cocoa powder. Place each ball in a mini-foil or paper candy liner and refrigerate in an airtight container. Bring to room temperature just before serving.

 Variations:

DARK MOCHA TRUFFLES RECIPE

Keep these on hand in your freezer during the holidays and you’ll always have a quick dessert for unexpected guests. They’re especially cute when served in foil or paper candy liners. If you prefer a nonalcoholic version you may use cold brewed coffee instead of the liqueur. Makes 16 servings. Follow this simple directions:

INGREDIENTS :

1 package Dark Chocolate, Chocolate Chunk Cookies
1 teaspoon instant espresso powder
1 tablespoon coffee flavored liqueur
¼ cup (1 stick) unsalted butter or buttery spread at room temperature
2 tablespoons unsweetened cocoa powder

DIRECTIONS :

In a food processor, process the cookies and espresso powder until the cookies are very finely ground. You will have almost 2 cups of cookie crumbs. Add the liqueur and butter and process until the mixture forms a ball or clumps. Shape the mixture into a flat disk, wrap tightly, and chill 2 hours.
Compress a tablespoon of dough into a ball, roll in the cocoa, and place on a foil-lined baking sheet. Chill 1 hour. Serve in foil or paper candy liners. Store, tightly covered, for up to 2 days or in the freezer for up to 1 month.

Chocolate is a sweet confection that most people just simply can’t get enough of. It is on the top of most people’s list of guilty pleasures. For Valentine’s Day, for example, they can be given along with a bouquet of roses. For Easter, they can be included in a basket or stuffed inside plastic eggs.

Believe it or not, gourmet chocolate is also great for dieters. Most experts agree that sweets in small moderation is actually a good thing for keeping cravings in check and as a way of rewarding oneself after a rigorous workout or a week of eating clean.

Chocolate has been consumed since as far back as the earliest recorded history. They are also one of the top choices for those that want to send a gift that is edible. Traditionally made with a chocolate ganache center coated in chocolate or cocoa powder, a chocolate truffle is a type of chocolate confectionery, usually in a spherical, conical, or curved shape. The ganache may be replaced with other fillings like melted chocolate, nuts, cream, caramel, almonds, berries, or other assorted sweet fruits, fudge, nougat, or mint, toffee, marshmallows, chocolate chips, and, popularly, liqueur. For their resemblance to the truffle fungus, they are named as chocolate truffle.

N. Petruccelli in Chambéry, France created the chocolate truffle in December 1895. With the establishment of the Prestat chocolate shop in London by Antoine Dufour in 1902, they reached a wider public, which still sells ‘Napoleon III’ truffles to the original recipe. Basically there are three main types of chocolate truffles now; they are American, European, and Swiss.

A mixture of dark or milk chocolates with butterfat and, in some cases, hardened coconut oil the “American truffle” is a half-egg shaped chocolate-coated truffle. With its creation in the mid-1980s Joseph Schmidt, a San Francisco chocolatier, and founder of Joseph Schmidt Confections has been given credit to.

Popularly known as the Harvey truffle, a Canadian variation of the American truffle,, includes the addition of graham cracker crumbs and peanut butter. Similar to that of peanut butter cups, other American companies may shape their truffles.

To create an oil-in-water type emulsion, the “European truffle” is made with syrup and a base made up of milk powder, cocoa powder, fats, and other such ingredients.

By combining melted chocolate into a boiling mixture of dairy cream and butter the swiss chocolate is made, which is poured into molds to set before sprinkling with cocoa powder.

These have a very short shelf-life and must be consumed within a few days of making unlike the previous two kinds of truffles.

By combining coconut oil, raw cacao and raw yacon syrup or raw agave, the “raw” truffle is made, then rolling them in either raw, shredded coconut, raw cacao and/or chopped almonds.

A serving of three Lindor Truffles weighs 36 g and contains 220 calories, with 160 calories from fat according to the official Lindt website. According to another source, the white chocolate and stracciatella flavors have 230 calories, while the peanut butter variety has only 210 calories.

18 g of fat, 13 g of saturated fat, less than 5 mg of cholesterol, 20 mg of sodium, 15 g of carbohydrates, less than 1 g of dietary fiber, 14 g of sugar, 2 g of protein and 6 percent of the daily recommended value of calcium is provided by a three-piece serving of Lindt’s assorted Lindor Truffles. Using sugar, coconut oil, palm kernel oil, cocoa butter, chocolate, milk, skim milk, milk fat, soya lecithin, barley malt powder, vanilla and caramel flavoring, etc Lindt makes its assorted Lindor Truffles.
